Ingredients
3 medium zucchinis, grated
6 slices of bacon, chopped
1 medium onion, finely chopped
1 cup all-purpose flour (or gluten-free flour if preferred)
1 teaspoon baking powder
1/2 cup grated cheddar cheese (or a mix of your favorite cheeses)
4 large eggs
1/4 cup olive oil (or vegetable oil)
Salt and black pepper, to taste
1 teaspoon dried oregano (optional)
Fresh parsley, chopped (for garnish)
Preparation
Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C).
Grease and line a 9×13-inch baking dish with parchment paper.
Step 2: Prepare the Zucchini
Grate the zucchini and place it in a clean kitchen towel or cheesecloth.Squeeze out as much excess moisture as possible to prevent a soggy slice.
