Skinny Meatloaf

eatloaf is a classic comfort food that’s hearty, flavorful, and satisfying. This Skinny Meatloaf version is lighter, using lean ground beef and whole wheat bread for a healthier twist. It’s packed with flavor and perfect for a nutritious weeknight dinner.

Ingredients:
For the Meatloaf:

1 lb tenderloin, or 96% lean ground beef
1 ½ slices of whole wheat bread, crusts removed and shredded
1 cup Vidalia onion, chopped
3 egg whites from large eggs
Pinch of salt
½ teaspoon pepper
3 tablespoons ketchup
1 tablespoon yellow mustard
1 tablespoon Worcestershire sauce

For the Topping:

¼ cup ketchup
1 tablespoon yellow mustard
2 teaspoons brown sugar

1. Preparing the Meatloaf:

. Preheat Oven:
Preheat your oven to 350°F (175°C). Lightly grease a loaf pan or line it with parchment paper for easier cleanup.

. Prepare the Bread:
Remove the crusts from the whole wheat bread and shred it into small pieces. Place the shredded bread in a large mixing bowl.

2. Mix the Ingredients:

Add the ground beef, chopped Vidalia onion, egg whites, salt, pepper, 3 tablespoons of ketchup, 1 tablespoon of yellow mustard, and Worcestershire sauce to the bowl with the shredded bread. Mix until all ingredients are well combined. You can use your hands or a wooden spoon to ensure everything is evenly distributed.

3. Shape the Meatloaf:

Transfer the meat mixture to the prepared loaf pan and shape it into a loaf, pressing down gently to ensure it holds together.

4. Preparing the Topping:

. Mix the Topping:
In a small bowl, combine ¼ cup of ketchup, 1 tablespoon of yellow mustard, and 2 teaspoons of brown sugar. Mix well until the sugar is dissolved and the sauce is smooth.
