1 lb cooked shrimp peeled and deveined
4 hard-boiled eggs sliced
6 cups mixed greens (spinach, arugula, or lettuce)
1 cup cherry tomatoes halved
1/2 cucumber sliced
1/4 red onion thinly sliced
1/2 avocado diced
1/4 cup shredded carrots
3 tbsp olive oil
