What is an ice cream sandwich?
An ice cream sandwich is not a complicated dessert. It is simply a block of ice cream sandwiched between two layers of cake-like biscuits. The variations are endless. Sometimes a cake base is used, while other times a biscuit will work. These days you get the giant ice cream cake sandwich, the Chipwich, or the British variant called a cream wafer or vanilla slice.
The very creative (and very tasty) ice cream sandwich was originally created in New York City in 1899 by a pushcart salesman. Fast forward a few decades, and the Chipwich was invented by Richard LaMotta, an ice cream sandwich made by sandwiching vanilla ice cream with two chocolate chip cookies. It’s hard to imagine that the ice cream sandwich has been in our lives for over 100 years already!
Ice Cream Sandwich Ingredients
Ice Cream : For this recipe, you’ll be making homemade ice cream with mascarpone and whipped cream. As with most homemade ice creams, it will be soft enough to spread on the cookie base. If you’re using store-bought ice cream instead, see our tips below on choosing the best ice cream.
Flavoring : dark chocolate chips and coffee are used to flavor the ice cream.
Biscuits : This recipe uses a type of shortcrust biscuit (Tastino Petit Beurre).
Cocoa powder – used to sprinkle on ice cream sandwiches before serving; you can also use powdered sugar.
How to make ice cream sandwiches
Make the ice cream. In a large bowl, mix the cream and mascarpone with an electric mixer until smooth. Add the coffee, chocolate chips and crumbled wafers and mix with a spatula. Make the biscuits. Dip each biscuit in the milk and place the bottom layer on the baking sheet with the mold.
Assemble the ice cream sandwiches. Spread the prepared ice cream mixture on the cookies, then arrange the top layer of cookies to cover the cream. Freeze for 4 hours. After the churning time has elapsed, cut the ice cream cake into sandwiches using the cookies as a guide. Dust the ice cream sandwiches with cocoa powder before serving.
