Ice Cream Sandwiches: The Delicious Recipe for Biscuit Ice Cream Sandwiches

The ice cream mixture needs to be soft enough to be spreadable. With homemade ice cream, this is usually not a problem. But store-bought ice cream contains more stabilizers, which means it will be firmer. More expensive brands may contain less stabilizers, so they will melt faster, making them more spreadable.

Do not soak the cookies in milk, just dip them quickly. If they soak too long they will break.

Cookie Ice Cream Sandwich Variations
You can use any of your favorite cookies, try any of the following: chocolate chip cookies, red velvet cookies, brownies, sugar cookies.

Take inspiration from the Chipwich and roll the ice cream sandwiches in mini chocolate chips before serving.

Don’t feel like coffee and dark chocolate chips? Feel free to use other mix-ins: white chocolate chips, crushed candies, M&Ms, chopped walnuts, or cranberries.

How to store homemade ice cream sandwiches
Homemade Ice Cream Sandwiches keep well in the freezer (perfect for making ahead for a party!). They are often best stored overnight in the freezer or refrigerator as this gives the cookie a chance to soften.

Be sure to freeze the Ice Cream Sandwiches for at least four hours before serving. The portioned ice cream sandwiches can also be stored individually. Wrap them in parchment paper, plastic wrap and store for up to 2 months .
