Easy dinner!!! Spinach tortellini soup. 🍲
2 garlic cloves, minced. I use the frozen cubes from Trader Joe’s. 1 cube=1 clove
2 tablespoons avocado oil (or olive oil)
Aprox 22 ounces of tomato soup. I use pacific brand but any will do
1/2 cup sun-dried tomatoes or 2 tablespoons sun-dried tomato paste
2 cups half-and-half
2 cups stock (I use veggie but you can use chicken)
1 teaspoon onion powder
1 tablespoons Italian seasoning
1/2 teaspoons salt
1/2 teaspoons pepper
1 (9-ounce) package cheese-filled (or whatever kind you fancy) tortellini
2 handfuls of fresh spinach
1/2 cup shredded Parmesan cheese to sprinkle on top after cooking
