Sauté garlic with the oil in a large stock pot over medium heat until golden brown.
When the garlic is done, add tomato soup, tomatoes, half and half, stock and spices, and bring to a simmer.
Once simmering, drop tortellini into the soup. Cook according to the package directions.
Add spinach just before serving
Top with parm cheese
Tonight I’m serving it with “oven toast” which is just slices of bread with butter and garlic salt. I put them in the oven on broil until they brown. Watch them closely, they burn fast!
