Citrus Orange Madeleines with Sugar Coating

Ingredients
For the Madeleines:

1 large egg, room temperature
30g (2 tablespoons) granulated sugar
30ml (2 tablespoons) vegetable oil
Zest of 1 orange
50ml fresh orange juice
125g (½ cup) plain yogurt
200g (1⅔ cups) all-purpose flour
6g (1½ teaspoons) baking powder
For Coating:

100g (½ cup) granulated sugar for rolling

Preparation
Bring the egg and yogurt to room temperature for better incorporation.
Zest the orange before juicing it to maximize the citrus oils.
Making the Dough
In a large bowl, whisk together the egg and sugar until light and slightly fluffy.
Add the oil, orange zest, and orange juice. Mix well.
Stir in the yogurt until completely incorporated.
In a separate bowl, whisk together flour and baking powder.
Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Cover the dough and let it rest for 30 minutes at room temperature.
Shaping & Cooking
Heat oil in a deep pan or fryer to 175°C (350°F).
Take small portions of dough (about 1 tablespoon each) and shape into oval forms.
Fry in batches until golden brown, about 2-3 minutes per side.
Remove with a slotted spoon and drain on paper towels.
