Ingredients:
Protein:
-1 lb shrimp, peeled and deveined
-1 tablespoon Cajun seasoning (adjust to taste)
Vegetables:
-1 small onion, diced
-1 small bell pepper, diced (red, green, or yellow)
-2 cloves garlic, minced
-1/2 cup frozen peas and carrots, thawed (optional)
-2 green onions, sliced (for garnish)
Grains:
-4 cups cooked rice (preferably day-old, cold rice works best)
