My whole family loves eating these flavor-packed burrito bowls filled with seasoned chicken breast, rice, and tons of other tasty ingredients. Inspired by the ever-popular Chipotle bowls, I found that making this copycat chicken burrito bowl recipe at home is just as easy, and even more delicious! It takes less than 30 minutes to throw them together, itโs totally customizable, and itโs great for meal prep or easy lunches.
Ingredients
For the Chipotle Chicken:
๐ 1 lb boneless, skinless chicken breasts or thighs
๐ถ๏ธ 2 tsp chipotle chili powder
๐ฟ 1 tsp cumin
๐ง 1/2 tsp smoked paprika
๐ง 2 cloves garlic, minced
๐ 2 tbsp lime juice
๐ฅ 1 tbsp olive oil
For the Bowl:
๐ 2 cups cooked rice (white, brown, or cilantro-lime rice)

1/2 cup diced tomatoes or pico de gallo

๐ง 1/4 cup shredded cheddar or Monterey Jack cheese
