Instructions
1/ Marinate and Cook the Chicken:
In a bowl, mix chipotle chili powder, cumin, smoked paprika, minced garlic, lime juice, olive oil, salt, and pepper. Add the chicken and coat evenly. Let marinate for at least 20 minutes.
Heat a grill or skillet over medium-high heat. Cook the chicken for 5-7 minutes per side until fully cooked. Let rest for 5 minutes, then slice into strips.
2/ Prepare the Bowl Ingredients:
Cook rice according to package instructions. Add lime juice and chopped cilantro for extra flavor if desired.
Roast or steam the corn and prep other toppings like shredded lettuce, diced tomatoes, black beans, and avocado slices.
3/ Assemble the Bowls:
Divide the rice among serving bowls.
Layer on black beans, corn, shredded lettuce, diced tomatoes, and avocado slices.
Top with slices of chipotle chicken.
4/ Garnish and Serve:
Sprinkle with shredded cheese and fresh cilantro. Add sliced jalapeños for heat and drizzle with sour cream or chipotle mayo for extra flavor. Serve with lime wedges on the side.
