Ingredients:
1 cup oatmeal (90 g)
100 ml water
1 apple, peeled and grated
1 tsp vanilla extract
1/2 tsp cinnamon
1 tsp sweetener (or to taste)
1 egg
1 tbsp olive oil (for frying)
2 tbsp yogurt (for serving)
Directions:
Prepare Batter: In a bowl, mix oatmeal with water and let it soak for a few minutes. Add the grated apple, vanilla extract, cinnamon, and sweetener. Stir in the egg until well combined.
Cook Pancakes: Heat olive oil in a skillet over medium heat. Spoon the batter into the skillet, forming small pancakes. Fry for 2 minutes on each side or until golden brown and cooked through.
Serve: Serve warm with a dollop of yogurt on top.
