Apples: 2, peeled, cored, and chopped
Sugar: 3 tablespoons
Butter: 1 tablespoon
Cinnamon: A pinch
For the Muffin Batter:
Egg: 1
Salt: A pinch
Vanilla Sugar: 8 g (1 packet or 1 teaspoon)
Sugar: 50 g (¼ cup)
Oil: 50 g (¼ cup)
Baking Powder: 5 g (1 teaspoon)
Flour: 200 g (1½ cups)
Directions
1. Prepare the Apple Filling:
In a skillet, melt the butter over medium heat.
Add the chopped apples, sugar, and a pinch of cinnamon.
Cook for 5 minutes until the apples are softened and caramelized.
Set aside to cool.
2. Make the Muffin Batter:
In a mixing bowl, beat the egg with a pinch of salt, vanilla sugar, and 50 g of regular sugar until light and fluffy.
Gradually add the oil while whisking.
In another bowl, sift together the flour and baking powder.
Add the dry ingredients to the wet ingredients, mixing gently until just combined.
3. Assemble the Muffins:
Preheat the oven to 180°C (356°F) and line a muffin tin with paper liners.
Spoon a small amount of batter into each liner, filling about one-third.
Add a spoonful of the apple filling on top.
Cover the filling with more batter, filling each liner about three-quarters full.
