π Ingredients:
π₯ 1 large cucumber

3 ripe tomatoes

1 small red onion
πΏ 1 bunch of parsley
πΆ 1/2 chili pepper (optional, for spiciness)
π Juice of 1 lemon
π₯ 2 tablespoons extra virgin olive oil
π§ Salt and freshly ground black pepper to taste
π§ 1 clove of garlic (finely chopped or pressed through a press, optional)

1οΈβ£ Cut the vegetables
Cut the cucumber π₯ into small cubes (you can leave the skin on for extra fiber).
Also cut the tomatoes π
into cubes and drain the excess juice.
Finely chop the onion and if you want to soften the flavor a bit, you can soak it in cold water for 5 minutes.
