Homemade Apple Pie: A Classic, Comforting Dessert

For the Pie Crust:

1 cup (230g) unsalted butter, cold and cubed
1 tsp salt
1 tbsp sugar
6-8 tbsp ice water

6 medium apples (Granny Smith, Honeycrisp, or your favorite)
Β½ cup (100g) sugar
ΒΌ cup (50g) brown sugar
1 tbsp lemon juice
1 Β½ tsp cinnamon
ΒΌ tsp nutmeg (optional)
2 tbsp cornstarch or flour
1 tbsp butter (to dot on top of the filling)
