1️⃣ Make the Pie Crust:
In a bowl, mix flour, sugar, and salt.
Add cold butter and cut it in with a pastry cutter (or use your hands) until it resembles coarse crumbs.
Slowly add ice water, one tablespoon at a time, mixing just until the dough comes together.
Divide into two discs, wrap in plastic, and chill for 1 hour.
2️⃣ Prepare the Apple Filling:
Peel, core, and slice the apples.
In a bowl, mix apples with sugar, brown sugar, lemon juice, cinnamon, nutmeg, and cornstarch. Let sit for 10 minutes.
3️⃣ Assemble the Pie:
Preheat oven to 200°C (400°F).
Roll out one disc of dough and place it into a 9-inch (23 cm) pie pan.
Fill with the apple mixture and dot with butter.
Roll out the second dough disc and place it over the apples (or cut into strips for a lattice top).
Seal the edges and brush the top with egg wash. Cut small slits in the top for steam to escape.
4️⃣ Bake the Pie:
Bake at 200°C (400°F) for 20 minutes, then reduce to 175°C (350°F) and bake for 30-35 minutes until golden brown.
Let it cool for at least 2 hours before slicing.
