Soft & Zesty Lemon Muffins
These light, fluffy, and citrusy lemon muffins are bursting with fresh lemon flavor! They’re easy to make and perfect for breakfast, a snack, or a sweet treat with tea. 🍋✨
📝 Ingredients (Makes 12 Muffins)
2 cups (250 g) all-purpose flour
¾ cup (150 g) granulated sugar
2 teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup (120 ml) unsalted butter, melted (or vegetable oil)
2 large eggs
½ cup (120 ml) milk (or yogurt for extra moisture)
¼ cup (60 ml) fresh lemon juice (about 2 lemons)
1 tablespoon lemon zest
1 teaspoon vanilla extract
👨🍳 Instructions
1. Preheat & Prep
Preheat your oven to 180°C (350°F).
Line a 12-cup muffin tin with paper liners or grease it lightly.
2. Mix Dry Ingredients
In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
3. Mix Wet Ingredients
In another bowl, whisk together melted butter, eggs, milk, lemon juice, lemon zest, and vanilla extract.
