Introduction
Stew is a traditional dish loved all over the world, but preparing it gently and tasty is not always easy. This recipe will guide you step by step to obtain a stew that melts in your mouth, perfect to warm up cold days and surprise your family with an explosion of flavors.
Ingredients
600 g beef (cut for stew)
2 tablespoons olive oil
1 large onion, finely chopped
2 carrots, cut into rounds
2 stalks of celery, diced
3 cloves of garlic, finely chopped
500 ml meat stock
200 ml red wine
400 g peeled tomatoes, crushed
2 bay leaves
1 sprig of rosemary
Salt and pepper to taste
Instructions
Preparing the meat
Cut the meat into equal cubes. Pat it dry with absorbent paper to remove excess moisture.
Brown the meat
Heat the olive oil in a large pan and brown the meat cubes on all sides. Remove the meat from the pan and set aside.
Sautéed
In the same pan, add the onion, celery and carrots. Cook over medium heat until the vegetables soften, then add the chopped garlic.
Deglaze with wine
Pour the red wine into the pan and let the alcohol evaporate for 2-3 minutes.
Combine the main ingredients
Add the browned meat, peeled tomatoes, stock, bay leaves and rosemary. Mix well and bring to the boil.
