My whole family loves eating these flavor-packed burrito bowls filled with seasoned chicken breast, rice, and tons of other tasty ingredients. Inspired by the ever-popular Chipotle bowls, I found that making this copycat chicken burrito bowl recipe at home is just as easy, and even more delicious! It takes less than 30 minutes to throw them together, it’s totally customizable, and it’s great for meal prep or easy lunches.
Ingredients
For the Chipotle Chicken:
🍗 1 lb boneless, skinless chicken breasts or thighs
🌶️ 2 tsp chipotle chili powder
🌿 1 tsp cumin
🧂 1/2 tsp smoked paprika
🧄 2 cloves garlic, minced
🍋 2 tbsp lime juice
🥄 1 tbsp olive oil
For the Bowl:
🍚 2 cups cooked rice (white, brown, or cilantro-lime rice)
🫘 1/2 cup black beans, rinsed and drained
🌽 1/2 cup roasted or steamed corn
🍅 1/2 cup diced tomatoes or pico de gallo
🥬 1/2 cup shredded lettuce or spinach
🥑 1 avocado, sliced
Optional Garnishes:
🧀 1/4 cup shredded cheddar or Monterey Jack cheese
🌶️ Sliced jalapeños
🌿 Fresh cilantro, chopped
🍋 Lime wedges
🥄 Sour cream, Greek yogurt, or chipotle mayo
