Ingredients to prepare Galette des Rois
2 sheets of puff pastry
4 eggs
Bitter almond essence, optional
150 gr. of grated almonds
50 gr. of butter
110 gr. of sugar
125 ml. of milk
A quarter of a vanilla pod
10 gr. of cornstarch
How to prepare Galette des Rois
To prepare a delicious galette des rois, we start by making the pastry cream. To do this, put the milk in a saucepan with 15 gr. of sugar and the vanilla, over medium heat. When it starts to boil, remove from the heat and let it rest.
Meanwhile, beat an egg yolk with 15 gr. of sugar until you get a whitish mixture. Then add the milk that we had reserved, which will already be warm, and the cornstarch. Put it back on low heat and keep stirring until you see that all the ingredients have thickened. Then remove from heat and let it rest.

Next we make the almond cream. To do this, beat the butter, which should be at room temperature, together with 80 gr. of sugar. When the two ingredients are well mixed, first add a beaten egg, stir, and then another, also beaten. Mix everything well and then add the grated almonds.
To this almond cream we add the pastry cream that we have made previously. If we want it to taste even more like almonds, we will add a few drops of bitter almond essence. We put the cream that we have obtained in a pastry bag and let it rest for about half an hour.
Separately, take the sheets of puff pastry and cut out two circles of approximately 27 and 28 centimetres in diameter. Take the smaller one and spread the filling that we have in the pastry dough on it, without reaching the edges.
