Beat the yolk of an egg and paint the edges of the puff pastry that do not have filling, with the help of a kitchen brush. If we are going to add a surprise, now is the right time.
Cover the filling with the largest sheet of puff pastry and seal the edges with the help of a fork.
Then, add a little water to the egg yolk that is left over from painting the edges and with it paint the entire surface of the puff pastry that acts as a lid. Put the galette in the fridge for another half hour.
When this time has passed, preheat the oven to 210º C, with heat from above and below. While it is heating up, paint the entire surface of the galette again and make the designs you like best with the help of a knife.
Put the galette in the oven and let it bake for about ten minutes. Then, lower the temperature to 180º C and leave it for another 20 minutes. Finally, take it out and let it cool before eating. Absolutely delicious!
