Wow, these cheese and ham puff dough sticks are really delicious.

Preheat the oven: Preheat the oven to 200oF (400oC). Line a baking tray of baking paper.
Prepare the trim: Spread the Dijon mustard uniformly on half of the puff pastry sheet (if you use it). Garnish with shredded cheese and sliced ham.
Fold and cut: Fold the other half of the puff pastry onto the filling to create a sandwich.
Using a sharp knife, cut the dough into straps about 1 inch wide.
You can twist the tapes for a fun presentation.
Bagged with beaten egg: Brush the tops of the dough sticks with the beaten egg.
