How to Make Classic Slow Cooker Pot Roast
Step 1: Sear the Roast (Optional but Recommended)

. Start by heating olive oil in a large skillet over medium-high heat. While the oil heats up, season your beef chuck roast generously with salt and pepper. Once the oil is hot, place the roast in the skillet and sear it on all sides until it develops a deep, brown crust (about 3-4 minutes per side). This step helps to lock in the flavors and creates a more flavorful base for your roast.

Once seared, transfer the roast to your slow cooker.

Step 2: Add the Vegetables and Aromatics

. Layer your carrots, potatoes, and onions around the roast in the slow cooker. Add the minced garlic, dried thyme, rosemary, and bay leaves (if using). Season everything with a little more salt and pepper to ensure it’s well-seasoned.

Step 3: Prepare the Liquid

. In a separate bowl or measuring cup, combine the beef broth, Worcestershire sauce, and soy sauce (if using). Pour this mixture over the roast and vegetables in the slow cooker. The liquid will help create a flavorful broth as the roast cooks, keeping everything moist and tender.

Step 5: Make the Gravy (Optional)

. Once the pot roast is cooked and you’re ready to serve, you can make a quick gravy using the cooking liquid. Remove the roast and vegetables from the slow cooker and set them aside. Discard the bay leaves.

. To make the gravy, transfer about 2 cups of the cooking liquid from the slow cooker into a saucepan. In a small bowl, whisk together 2 tablespoons of flour and 1/4 cup of water until smooth. Bring the cooking liquid to a simmer, then slowly whisk in the flour mixture. Cook for 3-4 minutes until the gravy thickens. If you prefer a thicker gravy, you can add a little more flour or cornstarch.
