In a large saucepan, combine the sugar and water. Cook over medium heat, stirring constantly, until the sugar dissolves.
Increase the heat to medium-high and bring the mixture to a boil without stirring. Let it boil until it turns a deep amber color.
Remove the saucepan from the heat and quickly stir in the butter and salt until melted and well combined.
Immediately stir in the mixed nuts and dried fruit until they are fully coated with the caramel.
Pour the mixture onto a baking sheet lined with parchment paper and spread it out evenly using a spatula.
Allow the brittle to cool completely at room temperature until it becomes hard and brittle.
Once cooled, break it into pieces and store in an airtight container.

For a different taste, you can use different kinds of nuts or just one type such as all almonds or pecans. If you prefer a spicier version, add a pinch of cinnamon or cayenne pepper to the sugar mixture. For those with allergies, replace nuts with seeds like sunflower or pumpkin seeds. You can also experiment with different dried fruits like apricots or cherries. If some of your family members prefer less sweetness, reduce the sugar slightly, and consider adding thinly sliced citrus zest for extra flavor.
