1. Pat the pork loin roast dry with paper towels and season all over with salt and pepper.
2. Place the minced garlic and dried thyme in the bottom of the slow cooker.
3. Place the seasoned pork loin on top of the garlic and thyme.
4. In a small bowl, mix together the apple jelly and ginger ale until well combined. Pour this mixture over the pork loin in the slow cooker.
5. Cover and cook on low for 6-8 hours, or until the pork is tender and cooked through.
