Village Bread

1. Activate the yeast
In a small bowl, combine the warm water and sugar. Stir to dissolve.
Sprinkle the yeast over the water and let it sit for about 5 minutes until it becomes foamy and bubbly.
2. Mix the dough
In a large mixing bowl, combine the flour and salt.
Pour the activated yeast mixture and olive oil (if using) into the flour.
Stir with a wooden spoon until the dough begins to come together, then use your hands to knead it into a soft dough. If it’s too sticky, add a little more flour.
3. Knead the dough
On a lightly floured surface, knead the dough for about 8-10 minutes until smooth and elastic.
Form the dough into a ball and place it in a lightly oiled bowl. Cover with a damp cloth and let it rise in a warm place for 1-1.5 hours, or until doubled in size.
4. Shape the bread
Once the dough has risen, punch it down to release air.
Shape the dough into a round or oval loaf, depending on your preference.
Place the shaped dough on a parchment-lined baking sheet or a lightly floured baking stone.
5. Second rise
Cover the shaped dough with a cloth and let it rise for 30-45 minutes, or until slightly puffed.
6. Bake the bread
Preheat your oven to 375°F (190°C).
Use a sharp knife or bread lame to make a few shallow slashes on top of the dough.
Bake for 30-40 minutes, or until the bread has a golden-brown crust and sounds hollow when tapped on the bottom.
Let it cool completely on a wire rack before slicing.
📌 Tips and Variations
✔️ Add herbs: Mix in rosemary, thyme, or garlic to the dough for extra flavor.
✔️ Whole wheat option: Replace part of the all-purpose flour with whole wheat flour for a more rustic and hearty bread.
✔️ For extra crispy crust: Place a small pan of water in the bottom of the oven while baking to create steam. This will give the bread a crispier crust.
