Turkey breast & Brussels sprouts

Pat the turkey breast dry with paper towels.
Rub the turkey with 1 tablespoon olive oil, garlic powder, thyme, salt, and pepper.
Place the turkey on a roasting rack in a roasting pan or on a baking sheet.
Prepare the Brussels sprouts:

In a bowl, toss the Brussels sprouts with the remaining tablespoon of olive oil, salt, and pepper. Optionally, drizzle with a little balsamic vinegar for extra flavor.
Arrange the Brussels sprouts around the turkey in the pan.
Roast in the oven for about 25-35 minutes, or until the turkey reaches an internal temperature of 165°F (74°C). Stir the Brussels sprouts once or twice during the roasting process to ensure they cook evenly and get a little crispy on the edges.

Rest the turkey for about 10 minutes before slicing.

Serve the turkey breast with the roasted Brussels sprouts on the side.
