2. In a large bowl, mix the almond flour, coconut flour, ground cinnamon, baking powder, and salt.
3. In a separate bowl, whisk together the eggs, unsweetened applesauce, almond milk, melted coconut oil, and vanilla extract until well combined.
4. Pour the wet ingredients into the dry ingredients and stir until just combined.
5. Fold in the diced apple and erythritol.
6. Use a spoon to scoop the batter onto the prepared baking sheet, forming small mounds.
7. Flatten each mound slightly with the back of the spoon to form fritter shapes.
8. Bake for 20-25 minutes, or until the fritters are golden brown and a toothpick inserted into the center comes out clean.
