1. Cut and boil potatoes in salted water until soft.
2. Let the potatoes dry out completely.
3. Preheat the oven to 190°C/374°F.
4. Pour olive oil onto a baking sheet. Place into a preheated oil for 3-4 minutes. Add fried potato pieces. Bake for 50 minutes, flipping halfway through.
5. Mix crispy potatoes with chopped rosemary, garlic, and parmesan.
