Instructions:
Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
Mix the dry ingredients: In a bowl, whisk together the flour, baking soda, and salt. Set aside.
Make the dough: In a large mixing bowl, beat together the softened butter and sugar until creamy and smooth. This should take about 2 minutes.
Add wet ingredients: Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next. Then add the coffee, vanilla extract, and instant espresso powder. Mix in the mascarpone cheese until well combined.
Combine dry and wet ingredients: Gradually add the flour mixture to the wet ingredients, mixing just until combined. The dough should be thick but soft.
Fold in the chocolate chips (optional): Gently stir in the mini chocolate chips, if using.
Scoop the dough: Use a cookie scoop or tablespoon to drop spoonfuls of dough onto the prepared baking sheets. Space the cookies about 2 inches apart, as they will spread slightly while baking.
Bake the cookies: Bake for 10-12 minutes, or until the edges are lightly golden and a toothpick inserted comes out clean.
Cool and dust: Allow the cookies to cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely. Once cooled, lightly dust the tops of the cookies with cocoa powder for an authentic tiramisu finish.
