This was my go-to favorite when I was a kid. I’d always ask my mom to make it for me.
1. In a skillet, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
2. Add the diced onion to the skillet and cook until softened, about 3 minutes.
3. Stir in the taco seasoning and water, and let it simmer for another 5 minutes.
4. In a large bowl, mix the diced tomatoes with green chilies, cream of mushroom soup, cream of chicken soup, corn, black beans, and 1/2 cup shredded cheddar cheese.
5. Layer 2 cups of crushed Doritos at the bottom of the slow cooker.
6. Spread half of the soup mixture over the Doritos.
7. Add the ground beef mixture over the soup layer.
8. Repeat with another layer of 2 cups crushed Doritos and the remaining soup mixture.
9. Top with the remaining shredded cheddar cheese.
10. Cover and cook on low for 4 hours or until heated through and bubbly.
11. Serve hot, garnished with extra Doritos on top for added crunch, if desired.
