Gently fold the egg yolk mixture into the beaten egg whites until just combined, being careful not to deflate the mixture.
Spoon the mixture onto the prepared baking sheet, spreading it into a circular shape about 1/2 inch thick.
Bake in the preheated oven for 25-30 minutes, or until golden brown and set.
Remove from the oven and increase the oven temperature to 400°F (200°C).
Spread the tomato sauce over the baked cloud bread base, then sprinkle with mozzarella cheese and arrange the pepperoni slices on top.
Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
Allow to cool slightly before slicing and serving.
