1 1/2 pounds ground beef
1 cup breadcrumbs
1/2 cup milk
1 egg

3 cups mashed potatoes
2 tablespoons butter
1/4 cup milk (for potatoes)

Directions
Preheat your oven to 350°F (175°C) and lightly grease a 12-cup muffin tin.
In a large bowl, combine the ground beef, breadcrumbs, milk, egg, onion, ketchup, Worcestershire sauce, salt, pepper, and garlic powder. Mix until well combined.
Divide the meat mixture evenly among the muffin cups, pressing gently to shape.
Bake in the preheated oven for 20-25 minutes, or until the meat is cooked through and the tops are browned.
While the meatloaf cupcakes are baking, prepare the mashed potatoes. In a medium saucepan, heat the mashed potatoes with butter and milk, stirring until smooth and creamy. Season with salt and pepper to taste.
Once the meatloaf cupcakes are done, remove them from the oven and let them cool slightly.
Using a piping bag or a spoon, top each meatloaf cupcake with a generous swirl of mashed potatoes.
Serve warm, with your choice of sides.
