These have been my favorite lately – I’ve made them 4 times already this month!

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, eggs, flour, garlic powder, onion powder, salt, and pepper. Mix until well combined.
Using a small ice cream scoop or spoon, drop mounds of the potato mixture onto the prepared baking sheet, spacing them about 2 inches apart.
Bake in the preheated oven for 20-25 minutes, or until the puffs are golden brown and crispy on the outside.
Remove from the oven and let them cool slightly on the baking sheet before transferring to a serving platter.
Garnish with chopped chives if desired, and serve warm.
Variations & Tips
For a different flavor profile, try adding crumbled bacon or finely chopped ham to the potato mixture. You can also experiment with different cheeses, such as Gruyère or mozzarella, for a unique taste. If you prefer a spicier kick, add a pinch of cayenne pepper or a dash of hot sauce to the mixture. For a gluten-free version, substitute the all-purpose flour with almond flour or a gluten-free flour blend.
