These are hands down my fave! I eat them every morning!
Preheat your oven to 375°F (190°C) and lightly grease a muffin tin.
In a large bowl, whisk together the eggs, heavy cream, salt, pepper, garlic powder, and onion powder until well combined.
Stir in the shredded cheddar cheese, crumbled bacon, and chives if using.
Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
Bake in the preheated oven for 15-18 minutes, or until the egg bites are set and lightly golden on top.
Allow to cool slightly before removing from the muffin tin. Serve warm.
Variations & Tips
For a veggie twist, try adding some chopped spinach or bell peppers to the egg mixture. If you have picky eaters, you can customize each muffin cup with different ingredients like diced ham or mushrooms. For a spicier version, add a pinch of cayenne pepper or some chopped jalapeños. These bites also freeze well, so you can make a big batch and reheat them as needed for a quick breakfast option.
