The Most Loved Apple Pie in Italy
1. Preparation of the apples: Peel the apples and cut them into thin slices. Put them in a bowl and sprinkle them with a little lemon juice to prevent them from blackening and 2 tablespoons of sugar, put it in a pan on the stove until it wilts.
2. Making the dough: In a large bowl, beat the eggs and sugar until light and fluffy. Gradually add the oil and milk, alternating with the sifted flour and baking powder. Mix well until the dough comes together.
3. Cake assembly: Grease a cake pan and lightly sprinkle with flour. Pour the batter into the pan, arrange the apple slices on top.
4. Baking: Bake in a preheated oven at 180°C for approximately 40 minutes or until a toothpick inserted into the centre of the cake comes out clean.
5. Finishing and serving: Let the cake cool in the pan for a few minutes, then transfer to a wire rack to cool completely. Before serving, dust the top with powdered sugar.
This very light apple cake is perfect for an after-dinner dessert or to accompany afternoon tea.
