Preheat your oven to 375°F (190°C).
Spray a 12-cup muffin tin with non-stick cooking spray.
In a large mixing bowl, whisk together the eggs and heavy cream until well combined.
Stir in the diced ham, shredded cheese, green onions, salt, pepper, and garlic powder.
Pour the egg mixture evenly into the prepared muffin cups, filling each about 3/4 full.
Bake in the preheated oven for 20-25 minutes, or until the quiches are set and lightly golden on top.
Allow the quiches to cool in the pan for a few minutes before removing them.
Serve warm or at room temperature.
Variations & Tips
For a vegetarian version, you can replace the ham with sautéed mushrooms or bell peppers. If you prefer a different cheese, try swapping the cheddar for Swiss or mozzarella. To add a bit of spice, consider adding a pinch of red pepper flakes or a dash of hot sauce to the egg mixture. These quiches can also be made ahead of time and stored in the fridge for up to 3 days or frozen for up to a month. Just reheat them in the oven or microwave before serving.
