The Best Caramel Corn

Preheat oven to 250°F (120°C). Place popcorn in two greased baking pans. Add peanuts if desired.
In a saucepan, combine brown sugar, corn syrup, margarine, and salt. Boil over medium heat, stirring constantly, for 5 minutes.
Remove from heat and stir in baking soda and vanilla (it will foam).
Pour the caramel over popcorn, stirring gently to coat.
Bake for 1 hour, stirring every 15 minutes.
Cool on waxed paper, then break into pieces and store in airtight containers.
