Instructions:
Prepare the Aubergines: Wash the aubergines and slice them into rounds, about 1/4 inch thick. Place the slices in a colander and sprinkle them with salt.
Let them sit for about 30 minutes to release excess moisture. Rinse the salt off and pat the slices dry with paper towels.
Coat with Flour Mixture: In a shallow bowl, mix the flour with salt, pepper, parsley, sweet paprika, and garlic powder. In another bowl, beat the eggs.
