Sweet Potato Cobbler

Instructions:
Preheat your oven to 375°F (190°C).
Make the sweet potato filling:
In a large mixing bowl, combine the mashed sweet potatoes, sugar, melted butter, vanilla extract, cinnamon, nutmeg, and salt. Mix until well combined. Spread this mixture evenly into a greased 9×13 inch baking dish or a similar-sized oven-safe dish.
Prepare the cobbler topping:
In another bowl, mix together the flour, sugar, baking powder, and salt. Cut in the chilled butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
Pour the boiling water into the flour-butter mixture and stir until just combined. Don’t overmix. The batter will be thick.
Assemble and bake:
Drop spoonfuls of the cobbler topping over the sweet potato mixture, covering it as evenly as possible.
Place the baking dish in the preheated oven and bake for about 35-40 minutes, or until the cobbler topping is golden brown and the sweet potato filling is bubbly around the edges.
Serve:
Let it cool for a few minutes before serving. You can enjoy it warm on its own or add a scoop of vanilla ice cream for an extra treat!
