Swedish Apple Cake

Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
Toss the apple slices with lemon juice, 2 tablespoons of granulated sugar, and ground cinnamon. Set aside.
In a large bowl, cream together the softened butter and remaining granulated sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
Pour half of the batter into the prepared cake pan and spread evenly.
Arrange half of the apple slices over the batter. Pour the remaining batter over the apples and spread evenly. Arrange the remaining apple slices on top.
Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for 10 minutes, then remove to a wire rack to cool completely.
Dust with powdered sugar before serving, if desired.
