Drain the soaked dates and remove pits.
Grind the rolled oats until finely ground.
In a food processor, combine chopped walnuts, cinnamon, salt (if using), orange zest, and dates until it forms a paste.
Add the ground oats to the mixture and blend until well combined.
Shape the mixture into small balls and place them on a baking sheet. Chill in the refrigerator for 15 minutes.
Dip each ball into the melted chocolate, then sprinkle with the reserved chopped walnuts.
Chill the chocolate-coated balls for another 15 minutes until the chocolate sets.
Serve cold as a sweet treat or light snack
