Super tasty! We ate every last bit of it.

1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, cooking until the onion is translucent.
2. Add the ground beef or turkey to the pot. Cook until browned, breaking it up with a spoon as it cooks.
3. Add the chopped bell peppers to the pot and cook for another 5 minutes until they start to soften.
4. Pour in the beef or chicken broth, diced tomatoes (with their juice), and tomato sauce.
5. Stir in the cooked rice, dried basil, dried oregano, salt, and black pepper.
6. Bring the soup to a boil, then reduce the heat and let it simmer for 30 minutes, allowing the flavors to meld together.
7. Taste and adjust seasoning if necessary.
8. Serve hot, garnished with fresh parsley if desired.
Variations & Tips
For a vegetarian version, omit the meat and use vegetable broth. You can also add more beans, such as kidney or black beans, for added protein. For a spicier kick, consider adding a diced jalapeño or some red pepper flakes. If you prefer quinoa, it can easily replace the rice for a different texture and added nutritional benefits.
