1 cup cherry tomatoes, halved
1/4 cup chicken or vegetable broth
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions:
1. Season the Seafood:
Sprinkle Cajun seasoning evenly over both the salmon fillets and shrimp.
2. Cook the Salmon:
In a large skillet, heat olive oil over medium-high heat. Add the salmon fillets and cook for about 4 minutes per side, or until fully cooked. Remove the salmon and set aside.
3. Cook the Shrimp:
In the same skillet, add the shrimp and cook for about 2 minutes per side, or until they turn pink and opaque. Remove and set aside with the salmon.
4. Sauté the Vegetables:
If needed, add a bit more oil to the skillet. Sauté the red bell pepper, green bell pepper, onion, and garlic until they begin to soften, about 4 minutes.
5. Add the Tomatoes and Broth:
Stir in the halved cherry tomatoes and broth. Let the mixture simmer for about 5 minutes, until the vegetables are tender.
6. Combine and Warm:
Return the salmon and shrimp to the skillet and heat through, gently stirring to combine with the vegetables.
7. Season and Serve:
Season with salt and pepper to taste. Garnish with chopped fresh parsley before serving.
Enjoy this spicy, flavorful Cajun salmon and shrimp dish!
