Preheat the oven to 200°C (390°F).
Slice the eggplants lengthwise into 1cm thick slices.
Arrange the slices on a baking sheet lined with parchment paper, brush with olive oil, and season with salt and pepper.
Bake the eggplants in the oven for 20 minutes, until tender and lightly browned. Let cool slightly.
2. Make the spicy beef stuffing:
In a large skillet, heat a little olive oil over medium heat.
Add the onion and garlic, and cook until soft and translucent.
Add the ground beef and cook until nicely browned.
Stir in the chopped tomato, tomato paste, cumin, paprika, and cinnamon. Mix well and simmer for about 10 minutes, until the mixture is nicely spiced and fragrant. Season with salt and pepper to taste.
Remove the skillet from the heat and stir in the chopped fresh parsley.
3. Assemble the rolls:
Place a tablespoon of beef filling on each eggplant slice and gently roll the eggplant around the filling.
Place the rolls in a lightly oiled baking dish.
4. Final cooking:
If desired, sprinkle the eggplant rolls with a little grated cheese.
Bake the rolls in the oven for 15 to 20 minutes, until the tops are lightly browned and the eggplants are cooked through.
5. Serve:
Serve warm, with a green salad or rice for a complete meal.
