Spiced Genoise Roll with Citrus Jam & Chocolate Drizzle ๐ŸŠ

1/3 cup dark chocolate, melted
Powdered sugar, for dusting
Orange zest, for garnish
Instructions
Prepare the Genoise Sponge:

Preheat your oven to 375ยฐF (190ยฐC). Line a 10×15-inch jelly roll pan with parchment paper, ensuring the edges are covered.
In a large mixing bowl, whisk eggs and sugar using an electric mixer on high speed until pale, thick, and tripled in volume (about 5 minutes). Add vanilla extract and mix briefly.
Sift together the flour, baking powder, spices, and salt. Gradually fold the dry ingredients into the egg mixture using a spatula, being careful not to deflate the batter.
Bake the Sponge:

Pour the batter into the prepared pan, spreading evenly. Bake for 10-12 minutes, or until the sponge is golden and springs back when lightly touched.
Immediately turn the sponge onto a clean kitchen towel dusted with powdered sugar. Peel off the parchment paper and gently roll the sponge, starting from the short side, with the towel inside. Allow it to cool completely.
Add the Filling:

Carefully unroll the cooled sponge and spread the orange marmalade over half the surface. Spread the raspberry or cranberry jam over the other half, creating a layered flavor profile.
Roll and Decorate:

Re-roll the sponge tightly, placing it seam-side down on a serving platter. Drizzle the melted dark chocolate over the top in thin streams.
Dust generously with powdered sugar and garnish with fresh orange zest for a festive touch.
Serve:

Slice and serve as a showstopping Christmas dessert, perfect with coffee or mulled wine.
