Southern Pecans Praline

Prepare the Ingredients:
Line a baking sheet with parchment paper or a silicone mat. This will be used to drop the pralines once cooked.
Cook the Praline Mixture:
In a heavy-bottomed saucepan over medium heat, combine the granulated sugar, packed brown sugar, salt, and evaporated milk (or half-and-half). Stir continuously until the sugars dissolve.
Add Butter and Boil:
Add the butter to the saucepan. Bring the mixture to a boil, stirring constantly to prevent burning or sticking to the pan.
Cook to Soft Ball Stage:
Continue boiling the mixture until it reaches the soft ball stage on a candy thermometer (around 236-240°F or 113-116°C). This stage is crucial as it ensures the pralines will set properly once cooled.
Remove from Heat and Add Vanilla:
Once the mixture reaches the soft ball stage, remove the saucepan from heat. Stir in the vanilla extract and pecan halves. The mixture will thicken slightly.
Drop onto Prepared Baking Sheet:
Quickly drop spoonfuls of the praline mixture onto the prepared baking sheet. Work efficiently as the mixture will begin to set as it cools.
Let Cool and Serve:
Allow the pralines to cool and set completely at room temperature. Once cooled, they are ready to be enjoyed!
Tips for Perfect Pralines:

Temperature Control: Use a candy thermometer to accurately gauge the soft ball stage. This ensures the pralines have the right texture—creamy and not too soft or hard.
Stirring Technique: Stir the praline mixture constantly during cooking to prevent hot spots and ensure even caramelization.
Quick Dropping: Work swiftly when dropping the praline mixture onto the baking sheet, as it starts to set immediately upon cooling.
Nutritional Benefits: While Southern Pecan Pralines are a decadent treat, they also offer nutritional benefits from pecans, which are rich in healthy fats, fiber, and antioxidants. Moderation is key to enjoying these treats while maintaining a balanced diet.
