Grab a large bowl and mix the sausage meat, onions, herbs, spices, garlic, breadcrumbs, salt, and pepper until everything is well combined. Make two rolls of sausage mixture, wrap it in cling film and let it set in the fridge.

Roll out the puff pastry and cut it into two rectangles. You can refrigerate the pastry for 10 to 20 minutes so it’s easier to work with. Next, fill each strip with the sausage filling. Beat the egg yolk and brush it along the edges of the pastry. Fold the pastry to form a roll, then brush the top with more egg and sesame seeds if you prefer. Cut the rolls into your desired size then bake the sausage rolls for 30 minutes. Let them cool slightly then serve warm.

Tips for the Best Homemade Sausage Rolls
If using frozen puff pastry, you’ll need to thaw it out first. Follow the instructions on the package to that it out correctly.

Store-bought puff pastry is the most convenient option, but if you want you can make it on your own.
