In a bowl, combine ground beef, onion, eggs, ketchup, 1 tablespoon mustard, 1 tablespoon Worcestershire sauce, panko breadcrumbs, salt, and pepper. Knead by hand until blended. Shape 4 oval patties to give them a “steak” appearance.
Heat a cast iron skillet or large skillet until very hot. Add 1 tablespoon of the fatty oil or bacon, then the breadcrumbs. The pancakes are grilled crunchy brown on all sides. Several minutes until there was no more rose inside. Remove from pot, set aside on a lined tissue, and cover to keep warm.
Add the remaining tablespoon of the fatty oil or bacon to the skillet and fry the onions until golden brown over medium heat. Add mushrooms, remaining spoonful of mustard and Worcestershire sauce and cook for several minutes. The mushrooms will release water, so cook the mixture for several minutes. Season with salt and pepper.
Sprinkle flour over everything, stir, and cook for another minute. Slowly add the meat broth and stir to combine while reducing heat to low. Simmer for a few minutes, and the sauce will thicken. Season as desired.
Add the fillets to the pan and boil them in the sauce. Cover and cook for 2 to 3 minutes until heated through. Serve over mashed potatoes and pour onion and mushroom sauce over each Salisbury steak. Sprinkle parsley for garnish.
