Pumpkin Cheesecake Snickerdoodles

To assemble the cookies, take a tablespoon of cookie dough and flatten it into a pancake shape. Place a teaspoon of the cream cheese filling in the center. Flatten another tablespoon of cookie dough into a pancake and place it on top of the cream cheese. Pinch the edges together to seal, then roll into a ball. Roll the ball in the cinnamon sugar coating and place on the prepared baking sheet, spacing them 2 inches apart.

Use the bottom of a glass or measuring cup to gently flatten each cookie dough ball.

Bake the cookies for 10-15 minutes, or until the tops start to crack slightly. Remove from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
